Mishiri

This recipe comes from a few friends of mine in Kenya. I lived there briefly while working with a volunteer organization in development. I hope you enjoy it as much as I did the first time I tasted it!
You will need:
- - Brown rice (for up to 4 people or less)
- - Tomatoes (2)
- - Green Beans (1/2 lb chopped)
- - Carrots (2)
- - Onions (3 small, or 1 med)
- - Bell pepper (1)
- - Cilantro (bushel)
- - Avocado (1 or 2)
- - Sunflower or corn oil (1/4 cup)
- - Salt (1 teaspoon)
- - Hot water (2 1/2 cups)
- - Mchuzi mix (beef flavor, 1 teaspoon)
Preparation:
- 1. Start brown rice
- 2. Boil french beans until tender, set aside.
- 3. Chop onions and bell pepper. Throw onto wok with oil.
- 4. Chop carrots, tomatoes, peel and chop potatoes. Add to stir-fry when onions begin to brown.
- 5. Add salt and 1 cup water, mchuzi mix. Let simmer, covered.
- 6. Add chopped cilantro and french beans and rest of water. Let simmer, covered until reduced a little.
- 7. Serve mishiri with avocado slices on top and rice on the side.
